Chocolatier Hubert Masse's work with chocolate has taken him around the world, Guatemala, Paris (La Maison du Chocolat, and Le Bristol), London (Les Fréres Roux) and Sydney. He opened his first chocolate shop with his Irish wife Susan in Perth, western Australia in 1990. They returned to France in 1995 and opened Le Cacaotier. The house specialties are dark chocolate ganache infused in citronella with lime and honey, and milk chocolate gianduja with hazelnuts from Italy Piedmont region, and lots more. Hubert Masse was awarded the Grand Prix du Chocolat Artisanal of Paris in 2008. He was named one of the top 12 chocolatiers in France at the 2011 Salon du Chocolat, doled out by the famous Club des Croqueurs de Chocolat.
